Crunchy Chocolate Truffle Cups

Ingredient List

Crunchy Truffles
  • Small check mark in a circle 150 g dark chocolate chips
  • Small check mark in a circle 80 ml double cream
  • Small check mark in a circle 20 g unsalted butter
  • Small check mark in a circle 8 Nature Valley™ Crunchy Oats & Honey Snack Bars (175g), roughly crushed
  • Small check mark in a circle 30 g mini marshmallows
Chocolate Topping
  • Small check mark in a circle 125 g dark chocolate chips
  • Small check mark in a circle 80 ml double cream
  • Small check mark in a circle 20 g unsalted butter
  • Small check mark in a circle Assorted sprinkles, for decoration

Preparation

  1. Line 1 x 12-hole muffin tray with paper cupcake cases.
  2. To make the truffles, place the chocolate chips into a medium heatproof bowl. Heat the cream and butter in a small pan over a medium heat, until just simmering then pour over the chocolate in the bowl. Leave for 5 minutes, then stir until smooth. Add the crushed granola bars and marshmallows to the chocolate mixture and stir until fully combined. Divide the mixture evenly between the paper cases and gently press down with the back of a spoon.
  3. To make the topping, place the chocolate chips into a small heatproof bowl. Heat the cream and butter in a small pan over a medium heat, until just simmering then pour over the chocolate in the bowl. Leave for 5 minutes, then stir until smooth. Spoon the topping over each truffle and smooth with the back of a spoon if necessary. Scatter over the sprinkles and leave to set in the fridge for up to 3 hours, or until firm. Store covered in the fridge.

Tips

  • Stir through chopped toffees or honeycomb for an extra indulgence.
  • Stir in some orange zest to the truffle mixture for a citrus tang!
